Anyone who needs to lose weight knows how difficult it can be to resist the temptation of desserts. With plenty of low carbohydrate options, there’s no reason to hold back. Some of the best low carb desserts will please dieters and all their friends who just want something that tastes good.

Low Carb Fruity Parfait

Ingredients

  • 1 cup of whipping cream
  • 1 teaspoon of vanilla
  • Zest of one lemon
  • 2 cups of sliced strawberries
  • 4 tablespoons of sugar free preserves (strawberry, apricot or marmalade)

Directions:

  1. Chill the mixing bowl before pouring in the whipping cream.
  2. Add vanilla and beat with an electric mixer until peaks form.
  3. Carefully fold the lemon zest into the whipped cream.
  4. In a saucepot, melt the sugar free preserves.
  5. In a separate bowl, mix the strawberries with the melted preserves.
  6. Set aside 1/4 cup of the strawberries, then pour the rest into 6 parfait cups.
  7. Add a dollop of whipped cream with lemon zest to each parfait.
  8. Top the whipped cream with the remaining strawberries.

Low Carb Mint Chocolate Delight

Ingredients

  • 2 cups of half and half
  • 4 ounces of chopped unsweetened chocolate
  • 1 cup of Splenda
  • 4 egg yolks
  • 2 teaspoons of vanilla
  • 3/4 teaspoon of peppermint extract
  • 1/4 cup of crushed peppermint candy
  • 6 sprigs of mint

Directions:

  1. Mix half and half, unsweetened chocolate and Splenda in a medium saucepan.
  2. Cook over medium-low heat, stirring frequently, until it starts to boil.
  3. Scoop out 1/2 cup of the mixture into a separate bowl, stir for 2 minutes and add egg yolks.
  4. Stir the contents of the bowl again, until well blended.
  5. Pour the contents of the bowl into the saucepan with the rest of the mixture.
  6. Stir while heating over medium-low heat, until it begins to boil again.
  7. Remove from heat.
  8. Add vanilla and peppermint extract and stir.
  9. Pour the mixture into small custard cups.
  10. Sprinkle a small amount of peppermint candy over each one and add a sprig of mint for garnish.

Low Carb Apple Crisps

Ingredients

  • Cooking spray
  • 4 medium apples
  • 1/2 cup of sugar free caramel syrup
  • 1 teaspoon of cinnamon
  • 1/4 cup of crushed nuts (walnuts, pecans or almonds)
  • 1/4 cup of sliced almonds
  • 1 teaspoon of butter or margarine

Directions:

  1. Spray a casserole dish with cooking spray.
  2. Peel and slice apples.
  3. Line the bottom of the casserole dish with the sliced apples.
  4. Pour the sugar free caramel syrup over the apples.
  5. Bake in a 350 degree oven for 15 to 20 minutes.
  6. Remove from the oven.
  7. Sprinkle with cinnamon and nuts.
  8. Melt the butter and pour over the apples.
  9. Top with the sliced almonds.
  10. Return to the oven for an additional 5 to 10 minutes, until almonds are brown.
